Rustic Blueberry Pie
Mmmm! There's nothing like warm blueberry pie with vanilla ice cream! Try this simple pan-free blueberry pie recipe that is sure to have your family asking for more!
2 cups Jubilee Blues blueberries
1/3 cup sugar
2 tbs corn starch
1/2 lemon juiced
2 tbs raw sugar
1 tbs butter rolled into small balls
pre-made pie roll out pie dough (thawed)
Preheat oven to 425 degrees. In a large mixing bowl, combine blueberries, sugar, corn starch, lemon juice, and salt until all berries are coated with mixture. Spread out pie dough onto baking sheet lined with parchment paper. Pour blueberry mixture into center of pie dough and pinch around the edges, creating a pocket of berries. Be sure to pinch closed any areas that are open. Whisk egg in a bowl with a small amount of water added. Paint egg wash onto dough. Sprinkle raw sugar around dough and inside blueberry mixture. Drop small butter balls (pea sized) onto pie. Bake for 20-25 minutes until golden brown. Serve warm with ice cream!
