It's National Blueberry Popover Day! Celebrate today (or any day!) with Jubilee Blues Blueberry Popovers! The secret to making perfect popovers is to get your pan nice and hot before adding ingredients and fill up each cup no more than half full. Also, try not to open the oven while baking. This will help keep your popovers light and airy as they bake.
1 cup milk
2 large eggs
1 tbsp + 1 tbsp unsalted butter, both melted and kept separate
1 cup all-purpose flour
1/4 tsp salt
Zest from 1 lemon
Juice from 1 lemon
1/2 cup Jubilee Blues blueberries
1/4 cup powder sugar (optional)
Makes 6 servings
Preheat oven to 450*F. Whisk the milk, eggs, and 1 tbsp melted unsalted butter in a large bowl until combined. Add flour, salt, zest and juice. Whisk until combined.
Warm up popover tin in the oven for a couple of minutes.
Remove tin from oven, pour the remaining butter evenly in the 6 popover cups. Fill up cups no more than halfway with the batter. Top each cup evenly with Jubilee Blues blueberries.
Bake popovers for 15 minutes at 450*F. Reduce heat to 350*F and bake another 15 minutes or until popovers are well browned. DO NOT OPEN OVEN!!
Turn popovers onto a rack and poke with fork or knife to let steam escape. Sprinkle with powder sugar. Serve immediately.
