Blueberry Compote  

 

4 lbs. of Blueberries 

4 cups sugar

1 orange zest

4 cups water

1/2 box corn starch

 

Combine water and corn starch and set aside. Simmer remaining ingredients. After fruit is tender and the sugar is dissolved, mix in the corn starch slurry and simmer for an additional minute. Cool and utilize for dessert topping for cheese cake, or blend in crushed ice for Mocktail smoothies.
