Blueberry Vinaigrette


In a blender container place the following:

1 cup fresh blueberries

1 tbs diced shallot

3 tbs honey

1/4 cup lemon juice

1/2 cup white wine vinegar

1/2 cup light olive oil

1/4 cup coconut milk

1 tsp white ground pepper

2 tsp salt

Blend on high for 30 seconds. Serve over mizuna or spring mix. Top with blue cheese, fresh blueberries, cooked red quinoa & toasted pecans.
