Blueberry Cornmeal Crisp

 

Preheat oven to 375*

 

Filling

In a large bowl gently combine the following:

 

3 c fresh blueberries 

3 tbs sugar

1/3 c orange juice 

1/2 tsp vanilla 

1/2 tbs flour 

Pinch of salt

Set aside 

 

Topping

In a food processor, combine the following:

 

1/3 cornmeal 

1/2 flour 

1/4 tsp baking powder

Pinch of salt 

1/2 c cold butter cut into cubes 

1 egg 

1/2 brown sugar 

1/4 white sugar 

Pulse until a crumbly dough forms, about ten times. 

 

Pour filling into 8inch baking dish then crumble the topping over the top and bake until lightly browned. About 25 minutes. Let cool for 15 minutes.

 

Serve with vanilla ice cream.
